Bordelet Poire Authentique
A former sommelier at a 3 star restaurant places his passion for wine into his production of first class Normandy cider. Old trees, low yields and terroir mean as much to cider as they do to wine. Champagne like and dry, the pear aromas are subtly balanced by citrus and white flowers that linger long into the finish.

Bordelet Poire Granit

Poiré Granit actually has 75-80 grams of sugar per liter, yet it doesn't taste particularly sweet. This is due to the tannin and acidity, which Bordelet says is twice as high as the apple!

Bordelet Sydre Argelette

The Argelette, Eric notes, "is more winey. Some vintages have to stay in the cellar longer. Argelette is the type of soil and it's the same 40-40-20 blend of the other apple ciders." This tends to have more skin contact, he explains.

Bordelet Sydre Doux

The Sydre "Doux" is an off-dry apple cider, with about 80 grams per liter of sugar, yet it is beautifully balanced. A Brut apple has but about 5-10 grams per liter, so it's drier than many Brut Champagnes!

Brunier Telegramme CDP 2004
It pours clear garnet, very light in color for a Châteauneuf-du-Pape. It seems light on the nose and palate, too, opening with a vinous scent of raspberries, spice, faint vegetal notes and a high-toned whiff of volatile acidity. It's a little more inviting in its flavor, juicy and very tart, simple red fruit and white pepper over almost sour acidity, on the thin side.

The 2003 Chateauneuf du Pape Mourre des Perdrix reveals a saturated dark ruby/purple-tinged color as well as a classic perfume of black cherries, raspberries, flowers, and a notion of barnyard/earth. Charbonniere CDP VV 2003
The best balanced wine of the entire portfolio of 2003s is the 2003 Chateauneuf du Pape Cuvee Vieilles Vignes. A complex nose of mineral, kirsch liqueur, raspberries, balsam, and pepper jumps from the glass of this medium to full-bodied, nicely layered, structured, rich wine with notes of black cherry and raspberry. Deep but with lovely ripe tannin, this wine can be drunk now or cellared for 10-12 years.

100% Pinot Noir. ‘Moderately saturated red-ruby. Knockout nose of red cherry, faded rose, minerals, brown spices and red licorice. Perfumed and sharply delineated, with superb inner-mouth lift and delicacy. The potential alcohol here was 14.2% but there’s no sense of excess weight. This really stains the palate on the back, with the tannins arriving late. Made entirely from tiny berries, notes Girardin. 100% Pinot Noir. ‘Highly aromatic nose combines redcurrant, tobacco, dried flowers, spices and iron. Offers more mid-palate precision and verve than the Bressandes, with redder fruits and attractive floral lift. A bit less stiff today. Finishes with dusty, ripe tannins. Despite the rather soft extraction he did, Girardin says that all of these wines still need further “refining” in barrel. 100% Pinot Noir grapes — 75% from all hillside vineyards in Marsannay, 10% Gevrey and 15% Bourgogne old vines, next to Chambolle and Vosne-Romanée. On the nose, smoky and rustic. On the palate, some black licorice and silky acidity. Easy, lush, minty chocolate; has more tannins but they are ripe. Very easy and grapey, very pure and elegant for a Bourgogne.
