Two hectares of the estate are dedicated to olive orchard.
These rise at 300mt over sea level and the soil is of the alberese quality.
Olive trees have different varieties and at Altesino most of them are present,
including the Leccino and Frantoio. The olives are picked by hand during the
month of November, depending on the season, usually between the 10th and 30th
and are brought to be pressed at the neighbouring town of Murlo (Frantoio
Etrusco) within 24 hours from harvest. The average yearly production is 5000 kg
of olives, which yield approximately 800 litres of extra virgin oil.
